Israeli Couscous Salad

Ingredients (Servings: pieces)
Pearl Couscous
g
Cucumber
Handful Cherry Tomatoes
Feta Cheese
g
Radish
Baby Spinach
g
Fresh Herbs (Dill, Mint, Parsley)
Salt & Pepper to taste
Olive Oil
Mustard
tbsp
Lemon Juice

Preparing In The Kitchen
  1. Boil the couscous as per instructions on the package (amount of couscous depends on how many people you want to feed).
  2. Once couscous is cooked, drain it and drizzle with olive oil to avoid sticking. Set aside and let it cool down completely.
  3. Chop cherry tomatoes in quarters, baby spinach and slice radish.
  4. For dressing mix mustard, olive oil and lemon zest. Season with salt and pepper. Adjust all ingredients according to your taste.
  5. Once couscous is cold mix in cucumber, tomatoes, radish, spinach and herbs. Mix it all together. Pour in the dressing and mix it well. Adjust the seasoning if needed.
