Lamb Pistachio Patties

These lamb pistachio patties are crazy delicious. Lamb + pistachio + rucola, what a combo, right? Juicy, spiced and amazing lamb patties.

Lamb Patties
Pistachios

Handful Fresh Rucola
Yellow Onion
Garlic Clove
Minced Lamb

Preparing In The Kitchen
  1. Place pistachios in a food processor and chop them roughly, place them into a bigger bowl. Then mix rucola the same way in a food processor and add it to pistachio in a bowl. Continue then chopping onion and garlic to get a smooth paste.
  2. Add the minced lamb in the bowl, season with salt and pepper, drizzle with olive oil. Mix it all well to combine all the ingredients.
  3. Make petties from the mixture, size depends on your preferences – we like smaller ones.
  4. Heat up the oven to 200ºC and prepare a baking sheet with parchment paper.
  5. Place a grilling pan over medium heat and drizzle in olive oil, once warm enough, add patties for a quick grill – 2 minutes on each side.
  6. Once all patties are grilled, spread them on the prepared baking sheet and place them in the oven to finish them with baking – about 15 more minutes.
  7. Once patties are baking, mix all the ingredients of whipped feta cream into a food processor.
  8. Once patties are done, serve them with whipped feta cream and warm pita bread OR salad and roasted cauliflower.
  9. Sprinkle over pomegranate seeds to garnish (optional).
