Glazed Almond Quinoa Salad

The dressing for this quinoa salad really makes a huge different for the tasting. So good and a very tasteful and juice summer salad.

Quinoa

Carrot
Handful Edamame Beans
g
Olive Oil
tbsp
Maple Syrup
tbsp
Lemon Juice
tbsp
Garlic Clove
Handful Almonds

Preparing In The Kitchen
  1. Preheat the oven to 180 ºC.
  2. In a colander, rinse the quinoa with warm water. Drain well. Put in a saucepan and fill up with water. Bring to the boil and simmer for about 20 minutes, stirring occasionally. Drain the quinoa and drain well.
  3. Chop the carrots in small sticks. In a small bowl, add olive oil, cinnamon, salt and pepper and add the carrots. Mix everything till evenly coated and put everything on a baking sheet with parchment paper.
  4. Put it in the oven for 20 minutes, until the carrots become tender.
  5. In the meantime, mix in a small bowl olive oil, maple syrup and add the almonds. After 10 minutes add the almonds on the baking sheet and bake it for additional 10 minutes.
  6. Cool down the warm quinoa under cold water, mix together with carrots and edamame beans and almonds.
  7. For the dressing, in a small bowl, mix olive oil, maple syrup, lemon, garlic, salt and pepper.
  8. Drizzle the dressing over the quinoa and mix until juicy - taste with lemon, salt and pepper.
  9. Decorate with fresh herbs on top.
