Kale Caesar Salad

Crunchy green kale, warm grilled chicken and all coated with healthy homemade Caesar dressing.

Kale

Boneless Chicken Breast

Parmesan Cheese

Lemon Juice

Salt & Pepper to taste
Dressing
Greek Yoghurt
g
Olive Oil
tbsp
Lemon Juice
tbsp
Dijon Mustard
tsp
Anchovy Fillets
Garlic Clove
Splash of Water
Preparing In The Kitchen
  1. Wash kale and “massage”it with lemon juice and drizzle of olive oil for few minutes.
  2. Place the grilling pan over medium heat and drizzle in some olive oil, before placing chicken on the pan, season with salt and pepper. Grill the chicken for few minutes on each side, until golden and cooked through.
  3. In the meantime, mix all the dressing ingredients with an immersion blender (or any other blender). Add water if needed. It should not too liquid.
  4. Once chicken is done slice it on think slices. Pour the dressing over kale and mix it well. Place chicken slices on top and sprinkle with parmesan.
