M&M Ice Cream Cookie Sandwich

Fresh Ice Cream sandwiched between two soft ‘n' chewy M&M cookies to make the ultimate summer treat. You cannot get enough!

Butter

All-Purpose Flour

Preparing In The Kitchen
  1. Preheat oven to 160ºC. Line a baking sheet with parchment paper and set aside.
  2. In the bowl of your stand mixer fitted with the paddle attachment mix together the butter and all the sugars together for 30 seconds on low speed. Turn the mixer up to medium speed and mix for 4 minutes until combined and fluffy.
  3. Add in the egg, egg yolk, vanilla, salt, baking soda, and corn starch and mix for 1 minute until smooth, scraping the sides of the bowl as necessary.
  4. Turn the mixer to low and add in the flour, mixing until just combined.
  5. With mixer still on low, add in the M&M's until incorporated.
  6. Using a large (3 tablespoon) cookie scoop, portion the dough onto the prepared baking sheet 5 cm apart.
  7. Bake the cookies for 12-13 minutes. The cookies will look very soft and underbaked. They will continue to bake on the cookie sheet. Allow to cool on the cookie sheet for 10 minutes before transferring to a wire rack to cool completely.
  8. Take a large scoop of ice cream and sandwich it between two cookies. Feel free to roll the sides in crushed M&M, chocolate chips, sprinkles, anything!
