Salmon Avocado over Lemon Rice

Lemon rice topped with juicy glazed roasted salmon and fresh avocado salsa.

Preparing In The Kitchen
    Lemon Rice
  1. Cook the rice per package instructions. While it is boiling add the lemon juice and the lemon zest.
  2. Turn down the heat as soon as it is done, set aside.
  3. Salmon
  4. Preheat the oven to 180ºC and cover a baking sheet with parchment paper.
  5. In a medium bowl, mix sesame oil, lemon juice, honey and coriander and glaze the salmon with it.
  6. Place the salmon fillets onto the baking sheet and bake them in the oven for 20-25 minutes. Depends on the thickness of the fillets.
  7. Avocado Salsa
  8. Peel the avocado, take out the pit and dice the avocado.
  9. Add the avocado with lemon juice, herbs, avocado topping, salt and pepper into a bowl and mix well.
  10. Serve the salmon fillets over a pile of fresh lemon rice and top everything with avocado
