Healthy Coleslaw

No mayo coleslaw with crunchy cabbage and carrot coated with fresh and sweet dressing and all mixed with a handful of fresh herbs.

Ingredients (Servings: pieces)
Salad
Purple Cabbage

Carrot
Peanuts
tbsp
Fresh Herbs (Cilantro, Parsley, Mint)
Pomegranate Seeds
Dressing
Maple Syrup
tbsp
Olive Oil
tbsp
Aceto Balsamico
tbsp
Garlic Clove
Salt & Pepper to taste
Preparing In The Kitchen
  1. Wash the cabbage and cut into thin strips. Peel the carrots and grate finely.
  2. Wash the herbs, shake dry and chop finely. Cut the pomegranate and remove the seeds from the skin.
  3. In a bowl, mix the shredded veggies with 2/3 of the fresh herbs.
  4. For the dressing, mix all ingredients together in a small bowl. Adjust the amounts, if you serve a smaller salad or a bigger one.
  5. Mix the dressing with the vegetables well. Cover with cling film and refrigerate for at least one hour, so all the flavours nicely combine.
  6. Before serving, sprinkle with the rest of fresh herbs, peanuts and pomegranate seeds.
