Cauliflower Apple Salad

Super light meal which can be a perfect low carb main dish or a salad/side dish served with lamb for example (tested and amazing!!!)

Salad
Cauliflower
head
Apple
Walnuts

Pomegranate Seeds

Apple
Olive Oil

Salt & Pepper to taste
Dressing
Lemon Juice
tbsp
Mustard

Olive Oil
ml
Salt & Pepper to taste
Preparing In The Kitchen
  1. Preheat the oven to 180 °C.
  2. Wash the cauliflower, remove the leaves and stalk and cut into small florets. Spread over baking sheet. Drizzle over olive oil and season with salt and pepper.
  3. Bake for 15 minutes until soft and golden brown.
  4. In the meantime, wash, dry, core the apple and cut into thin slices.
  5. Mix all the ingredients for dressing. If needed, add a splash of water to get it more liquid.
  6. Once cauliflower is done, set aside for few minutes.
  7. Pour over dressing and mix it well, serve it on a plate and spread over apples, walnuts and pomegranate.
