Avocado Grilled Corn Salad

Creamy salty avocado with sweet grilled corn all drizzled with fresh lime juice and fresh chopped coriander. Sounds yummy, right?

Ingredients (Servings: pieces)
Garlic Powder
Lime Juice
Cherry Tomatoes
Handful Fresh Coriander
Salt & Pepper to taste
Preparing In The Kitchen
  1. In the food processor mix avocado, garlic powder, 3 tablespoon lime juice and season with salt and pepper.
  2. Grill the corncobs on the grill until golden brown.
  3. Once corn is done, let them cool down and ‘shave’ each stick with a knife.
  4. Place the corn pieces into a bowl, add remaining lime juice and season with salt and pepper. Mix till evenly combined.
  5. Add chopped coriander, cherry tomatoes and mix it well.
  6. Spread avocado cream on a big plate and add the corn tomato salad.
