Strawberry Sheet Pan Cake

Preparing In The Kitchen
  1. Preheat the oven to 175 ºC.
  2. Whisk eggs together with sugar then add vanilla extract, oil and sour cream. Mix it well.
  3. In a separate bowl mix baking powder, flour and pinch of salt. Slowly start adding flour mixture into the wet mixture. Mix it all well and slow.
  4. Prepare 24x24 cm baking tray – grease with butter or place in the baking sheet. Pour in half of the dough mixture and spread over sliced strawberries then pour over rest of the dough mixture.
  5. Bake the cake for about 45-55 min or until a toothpick inserted into centre comes out clean.
  6. While cake is baking prepare the cream cheese frosting – mix all the ingredients together until you get a smooth frosting (without lumps).
  7. Once cake is done let is cool down – once it is cooled down spread over cream cheese frosting and on top sprinkle with chopped mint, pistachios and lemon zest. Serve it with a refreshing mint lemonade.
