Mediterran Skillet Chicken

Moist and tender chicken breast with sun-dried tomatoes, artichokes and capers cooked in a skillet in under 30 minutes – so it is perfect for busy weeknights.

Boneless Chicken Breast
g
Curry Powder
tsp
Black Pepper
tsp
Kosher Salt
tsp
Olive Oil
tbsp
Artichoke Hearts
g
Sun Dried Tomatoes
g
Capers
tbsp
Lemon Juice
tbsp
Salt & Pepper to taste
Preparing In The Kitchen
  1. Mix in a bowl olive oil, curry powder, salt and pepper. Mix it with the chicken breast till evenly coated.
  2. Heat up a large skillet on medium-high heat and add the chicken for about 4 min until it turns nice golden color. Flip the chicken and brown the other side as well. Then remove the chicken to a plate.
  3. Lower to medium heat and add artichokes, sun-dried tomatoes, capers and lemon juice to the same skillet. Stir to combine everything and cook it for a few minutes.
  4. Add the chicken back to the skillet and cook everything for about 5-10 min. Cover the skillet and cook until the chicken is completely cooked through.
  5. Make sure to spoon the olive oil mixture of vegetables from the skillet over the chicken.
