Chana Chaat Salad With Chicken Skewers

Fresh salad made with couscous, chickpeas, colourful pomegranate seeds and sweet juicy mango all mixed with fresh herbs.

Preparing In The Kitchen
  1. First marinate the chicken with mixture of all ingredients from marinade then transfer to a bowl. Cut the chicken into 4 cm chunks, add to the marinade and turn to coat. Cover and leave to marinate in the fridge for six to 24 hours.
  2. Prepare the couscous as per instruction on the package.
  3. Slice the mango on cubes, wash and drain chickpeas and chop all of the herbs.
  4. Once couscous is done and cold mix all the salad ingredients together in bowl – pomegranate seeds, mango, fresh herbs, chickpeas.
  5. Before grilling chicken, you can make skewers out of it, but that is optional.
  6. Grill the chicken on the grilling pan or on the grill.
  7. In the meantime, prepare the dressing by mixing all of the ingredients in blender.
  8. Pour the dressing over salad and serve the chicken next to it.
