Preparing In The Kitchen
Cook the pasta as per instructions on the package.
In the food processor, place sundried tomatoes, anchovy, capers, onion and rosemary. Blitz until smooth, but still with some pieces.
In a pot, drizzle olive oil and place over medium heat. Add the sundried tomato paste and cook for 4-5 minutes.
Add red wine and cook for another 4-5 minutes, then add the beef and stir it all well. Season with salt and pepper and cook for additional 2-3 minutes.
In the end add tomato sauce and parmesan rind. Mix it all well and cover with a lid, cook for about 15 minutes. Add quartered artichokes and cook for another 5 minutes.
Once the sauce is creamy and beef is cooked it is ready to serve with the pasta.
Sprinkle all with grated parmesan.
