Preparing In The Kitchen
Prepare the pasta according to the package instructions in boiling salted water, drain and let cool.
For the dressing, peel the garlic and shallots and cut into fine cubes. Wash the herbs, shake dry and pluck the leaves from the stems. Chop finely. Combine all ingredients in a glass jar and whisk until smooth. Taste and adjust the salt and pepper.
Wash the cherry tomatoes, pat dry and cut in half. Wash the basil, shake dry and coarsely tear the leaves. Drain the dried tomatoes and cut into strips. Halve the avocado, remove the core and peel. Cut the pulp of the avocado into even wedges.
Add the pasta, mozzarella, tomatoes, sun-dried tomatoes, olives and avocado to a large salad bowl. Pour over the dressing and toss well to combine. Serve warm or cold. The salad will develop more flavor as it sits.
