Preparing In The Kitchen
Unfreeze the shrimps, place them in a bowl and add all the spices, drizzle with olive oil. Mix well till evenly coated and leave for 30 minutes to marinate in the fridge.
In the meantime, cut all the salad ingredients. Boil the eggs, peel and cut the pomelo, slice the avocado, cherry tomatoes and radish.
In a pan over medium high heat, add some olive oil and prepare the shrimps. Cook them for 4-5 minutes, until done and a bit crispy on the outside.
In a big bowl, add the green salad, then add all the other ingredients. Pour in olive oil and vinegar (adjust the taste if needed).
Toss well and sprinkle with fresh coriander.
