Lamb Kofta with Cucumber Salad

Juicy grilled lamb kofta with fresh cucumber salad.

Lamb Kofta

Minced Lamb
Yellow Onion
finely chopped
Garlic Clove
Fresh Herbs (Parsley, Mint)

Ground Cinnamon

Baharat Spice
tsp
Ground Nutmeg
Salt & Pepper to taste
Cucumber Salad
Cucumber
tbsp
Skyr Yoghurt
Garlic Clove
crushed
Fresh Herbs (Parsley, Mint)
Pine Nuts
toasted
Salt & Pepper to taste

Instructions

Preparing In The Kitchen
  1. In a big bowl, mix all ingredients for the kofta and mix everything together. (Use your hands).
  2. Shape them into long ‘fingers’. Stick them onto skewer stick – make sure, the kofta is tight and keeps its shape.
  3. Grill them for 6 minutes per side on medium fire (till golden brown).
  4. In the meantime, shave the cucumber with a peeler and place it in a bowl to mix it with all of the ingredients – feel free to add lemon juice or any acid if you want to.
  5. Once koftas are done, serve it together with the cucumber salad.
