Preparing In The Kitchen
Heat up the oven to 190 ºC and prepare a baking sheet with parchment paper.
Heat up a pan on medium high heat and add chopped onions and garlic. Cook about 4-5 minutes.
In a large bowl or food processor, place all remaining ingredients for the patty, except the black beans. Stir or pulse everything together, then add the black beans. Mash with a fork or pulse the mixture, leaving some larger chunks of beans.
Form the mixture into patties.
Place patties on a baking sheet and bake for 20 minutes on each side. Halfway, flip the patties.
For the avocado cream, place the avocado in food processor, add 2 tablespoons of lime juice, season with salt and pepper and blitz until smooth and creamy.
To prepare the lime corn, wash and drain the corn. Mix with 2 tablespoons of lime juice and chopped fresh coriander. Season with salt and pepper to taste.
Once the burger patties are ready, assemble the burger. Toast the burger buns. On the bottom, add bbq sauce, salad leaves, and top it with the patty, avocado cream and corn lime.
