Preparing In The Kitchen
Preheat the oven to 200 ºC and prepare a backing sheet with parchment paper.
Remove the outer leaves from the cauliflower, cut into small florets and wash.
In a medium bowl, mix the panko, breadcrumbs, smoked paprika, salt, and pepper. In a second bowl, whisk the eggs.
Dredge the cauliflower through the crumbs, covering fully. Place on the prepared baking sheet. Repeat with the remaining cauliflower. Bake for 20-25 minutes, turning the cauliflower halfway through cooking.
In the meantime, heat up a small saucepan over medium high heat and melt the butter. Once melted, whisk in the BBQ sauce and season with salt and pepper. Pour the sauce over the cauliflower, gently tossing to coat. Return to the oven for 5 minutes.
For the ranch dip, combine all ingredients in a bowl or glass jar. Taste, adding salt and pepper as needed.
Serve the cauliflower with extra BBQ sauce and ranch dip.
