Instructions

Preparing In The Kitchen
  1. Preheat the oven to 200 ºC and prepare a baking sheet with parchment paper.
  2. Spread the bacon stripes on the baking sheet and place them in the oven to bake for 7-10 minutes, until crispy.
  3. Simple Fried Eggs
  4. In the meantime, heat up a large skillet on medium high heat and add 1 teaspoon butter. Fry the eggs in 2-3 batches, adding another tablespoon butter if needed. Flipping halfway through, until the egg whites are cooked completely. You can leave the yolks soft or cook them longer.
  5. Perfect Round Eggs
  6. Spray a muffin tin pan with nonstick cooking spray. Break an egg into each of the cups of the muffin pan. Poke the whites with a sharp knife 3 times around the outside of the yolk to break up the whites to set as they cook. If you want a hard cooked egg, gently pierce the egg yolk with a sharp knife. Put it in the oven until the yolk has set, about 10 minutes.
  7. Once the bacon is done, tap it gently with paper towels to drain them from grease.
  8. On the same baking sheet, separate the English muffin halves, optionally add a slice of cheddar cheese and place them in the oven. As the oven is already hot from the bacon, it just takes a couple of minutes to toast the halves. Set a timer for 5 minutes and keep an eye on them.
  9. As the English muffins are toasting, slice the avocado in thin slices.
  10. To assemble the sandwiches, place the fried eggs on the bottom half, sprinkle with salt and pepper. Then add the slice of bacon and top with avocado slices. Then place the other half of the English muffin on top.
