Spinach Yoghurt with Walnuts

This is a delicious Persian accompaniment that goes with almost anything.

Instructions

Preparing In The Kitchen
  1. Bring a saucepan of water to boil, add the spinach and simmer for 2-3 minutes until wilted. Drain and plunge into a bowl of iced water to stop it from cooking further.
  2. Once cooled, drain well and finely chop.
  3. Put the spinach into a bowl with the yoghurt, garlic, lemon zest, 2/3 of the walnuts, sumac and a tablespoon of olive oil. Mix well and season with salt and pepper.
  4. Spread the mixture out on a flat plate, drizzle with some olive oil and sprinkle with extra sea salt and the remaining walnuts. Enjoy with some warm pita bread.
