Preparing In The Kitchen
In a large bowl, combine the flour, sugar, baking powder, baking soda, cinnamon and salt.
Melt the butter in a small pan. In another bowl, mix the milk, sweet potato puree, eggs and melted butter. Pour mixture over dry ingredients and stir using a rubber spatula just until moist but slightly lumpy.
Preheat the waffle iron and coat with nonstick spray or oil.
Pour 3 tablespoons of the dough in the middle of the waffle iron and bake the waffles until golden brown. Do the same with the rest of the dough. Serve immediately.
