Preparing In The Kitchen
In a pan over medium high heat add 2 tbsp butter and fry the garlic, thyme and rosemary. Cook until the garlic is golden, and the herbs are crisp and “fried”, about 3 minutes.
Remove the herbs and set aside.
To the pan, add water and bring to a boil (follow the instructions of the polenta packaging) Slowly whisk in the polenta, stirring constantly until the polenta is soft and thick, about 5 minutes.
When the polenta starts to pull away from the sides of the pot when whisking, vigorously whisk in the remaining butter and parmesan and continue whisking until the butter and cheese are melted.
Whisk in the herbs and season with salt and pepper to taste.
If the polenta is still thick too much, add water or cream.
