Put the quinoa in a colander and rinse with warm water. Drain well.
Heat a small saucepan over medium heat. Once hot, add quinoa and toast for 2 minutes, stirring frequently, do not burn.
Add the almond milk and coconut milk and stir. Bring to boil over high heat, then reduce heat to low and simmer for about 20 minutes, uncovered, stirring occasionally.
Once the liquid is absorbed and the quinoa is tender, remove from heat and add cocoa powder, maple syrup and vanilla (optional). Stir to combine.
Serve each bowl of quinoa with desired toppings.
