Preparing In The Kitchen
Cook the rice as per instructions on the package and boil the eggs for 5 minutes.
Preheat the oven to 180 ºC.
Place cod fish fillets into a baking dish, drizzle over olive oil and season with salt and pepper. Cover with foil and place in the oven. Bake for 20 minutes (until falling apart – don’t overcook because it will get too dry)
In a small bowl, whisk the sugar and salt with the rice vinegar and sesame oil. Season with salt and pepper.
Peal the carrots and marinate them with the carrot dressing. Peel and slice the avocado.
In a small pan, heat up the hoisin sauce. Be careful not to burn.
Once the fish is done, add few spoons of rice, cod fish pieces, carrots and sliced avocado. Drizzle over hoisin sauce and sprinkle all with fresh coriander and some black sesame seeds.
