Preparing In The Kitchen
Preheat the oven to 200 ºC.
In an ovenproof dish, place tomatoes and garlic cloves. Drizzle them with olive oil, season with salt and pepper. Mix it all well.
Cover with aluminium foil and place it the oven. Roast for 15 minutes covered, and in the end uncover and roast for additional 5 minutes. Tomatoes should crack and release the liquid.
In the meantime, boil the spaghetti as per instructions on the package. Don’t overcook them, leave them al dente.
Once spaghetti are cooked, and tomatoes are roasted, place the spaghetti in the dish with tomatoes and mix it all well (Al dente spaghetti will nicely soak the liquid).
Serve it with fresh basil and a drizzle of olive oil.
