Instructions

Preparing In The Kitchen
  1. Preheat the oven to 200 ºC. Wash, slice and core the plums and grate the apple.
  2. Add 4 tablespoons of butter to an oven-safe skillet set over medium high heat. Allow the butter to brown until it smells slightly toasted and is a deep golden brown.
  3. In the meantime, combine the plums, 80 grams of brown sugar, apple brandy, apple, cornstarch, vanilla extract and half a teaspoon of cinnamon. In a large bowl and mix well till evenly coated.
  4. Remove the skillet from the heat and add the plums, tossing to combine.
  5. Transfer to the oven and bake for 10-12 minutes. Reduce the oven to 180 ºC.
  6. Meanwhile, in a large bowl, whisk together the flour, ground almonds, baking powder, remaining cinnamon and 120 grams brown sugar.
  7. Add 120g melted butter and the milk and mix until just combined.
  8. Remove the plums from the oven and dollop the batter over the peaches. Sprinkle with sugar.
  9. Transfer to the oven and bake again for 25-30 minutes, or until golden on the top. Let it cool down for 5 minutes and serve warm with vanilla ice cream.
