Zucchini Chocolate Chunk Bread

Instructions

Preparing In The Kitchen
  1. Preheat the oven to 160 ºC and grease a cake tin.
  2. Wash the zucchini, pat dry and grate coarsely. Add a pinch of salt and let it rest for about 20 minutes. Squeeze the grated zucchini vigorously. Peel the banana and smash it with a fork.
  3. In a large bowl, mix the coconut oil, honey, eggs and vanilla. Add the zucchini, banana, flour, baking powder, cinnamon and salt and mix well.
  4. Fold in the chocolate chips.
  5. Pour the dough in the baking pan and bake for about 50-60 minutes on a medium rail, until golden brown.
  6. Carefully remove and allow to cool for at least 30 minutes.
