Yellow summer zucchini, mixed with minced beef and tomato sauce made out of roasted cherry tomatoes. Topped with fresh halloumi and baked to perfection.

Preparing In The Kitchen
Preheat the oven to 200 ºC. Peel and chop the onion.
Place a large, oven proof skillet over medium high heat. Add beef and onion and cook until the beef is browned, about 5-7minutes.
Wash and slice the zucchinis. Wash tomatoes, pat dry and cut 250g in half.
Add the zucchini slices and cook for additional 2-3 minutes. Stir in the halved cherry tomatoes and add smoked paprika. Season well with salt and pepper.
Pour in the red wine and let it simmer for 5-10 minutes or until the tomatoes are soft and released their juices.
Add the basil and stir occasionally till everything is mixed. Season with salt and pepper.
Pat dry and slice the halloumi, place it on top. Add the remaining cherry tomatoes on top and transfer the skillet to the oven.
Bake for 10-15 minutes or until the cheese is golden and the sauce has thickened slightly.
Serve warm, topped with fresh basil and toasted bread for dipping.
