Chicken Curry Sandwich

This chicken curry sandwich is absolutely perfect if you are in a hurry and want to get a healthy lunch. Make this chicken curry spread in under 10 minutes and you have a healthy sandwich.

Cucumber

Skyr Yoghurt

Curry Powder
tbsp
Lime Juice
Handful Fresh Coriander

Whole Grain Bread
Salt & Pepper to taste

Instructions

Preparing In The Kitchen
  1. Chop grilled the chicken breast in small cubes and dice the onion and the cucumber.
  2. In a medium size bowl, mix the yoghurt with curry, lime juice, salt and pepper.
  3. Add the chicken, onion and cucumber and mix till evenly coated.
  4. Spoon the Chicken Curry Spread on the toast and sprinkle it with coriander and pomegranate seeds.
